Been looking for Spanish Serrano ham? The Spanish Trading Company are here

A type of dry-cured Spanish ham, the Serrano ham – or jamón Serrano – is synonymous with Spain, hanging from the ceilings of dedicated ham shops that seem to elude the rest of the world. Covered with salt and left for two weeks, the Serrano ham process sees hams having excess moisture drawn out to preserve them and keep them from spoiling. With the salt washed off, the Serrano ham is then hung to dry for six months, then hung for a further six to eighteen months in a cooler climate.

Cut into thin slices, the Serrano ham is normally enjoyed raw, in a crispy bread roll. Unfortunately for those who have sampled and enjoyed the Serrano ham, its lack of availability outside of Spain is a particularly difficult cross to bear.

As a testament to the Spanish love of jamón, situated in the Spanish town of Calamocha, the jamón is paid tribute with the bizarre iron statue situated in the central reserve of a roundabout, a ham foreleg pointing skywards in a westerly direction.
