A type of dry-cured Spanish ham, the Serrano ham – or jamón Serrano – is synonymous with Spain, hanging from the ceilings of dedicated ham shops that seem to elude the rest of the world. Covered with salt and left for two weeks, the Serrano ham process sees hams having excess moisture drawn out to preserve them and keep them from spoiling. With the salt washed off, the Serrano ham is then hung to dry for six months, then hung for a further six to eighteen months in a cooler climate.
